The Best Black Sesame Granola

Lightly sweet, crunchy clusters, sunshine-y apricots, and mellow pecans make this black sesame granola a delicious way to start the day. 

Ingredients:

1/8 cup ground flaxseed

2 cups old fashioned oats

1 cup pressed barley

1 1/2 cup pecans

1/4 teaspoon allspice

1/2 cup dried apricots

1/4 cup brown sugar

1/2 teaspoon salt

Ingredients:

1/4 cup black sesame paste

1/4 teaspoon vanilla extract

Tools:

- Knife

- Cutting Board

- Bowls

- Spatula or mixing spoon

- Sheet pan

Make the flax egg

In a small bowl, combine the ground flaxseed with the water.  Set aside. After a few minutes, the liquid will begin to thicken.

In a large bowl, combine the rolled oats and pressed barley. Then, add the pecan halves, allspice, and salt.

Combine dry ingredients

Combine wet ingredients

Mix the black sesame paste, vanilla extract, and brown sugar. These ingredients will form a thick paste.  Then, add the flax egg, stirring well to incorporate.

Put it all together

Add the wet ingredients to the large bowl of dry ingredients.  Stir well, pressing the black sesame paste into the grains until it is thoroughly distributed.

Bake, then add apricots

Press the granola into a sheet pan and bake for 40 minutes. Cool completely. Chop the dried apricots, then toss them into the granola to make chunks and crumbles.
