Braised Red Cabbage with Caraway Seeds
You’ll just need a handful of ingredients and basic kitchen tools to make this vegan, no-sugar-added recipe.
Ingredients:
Red cabbage
Red onion
Garlic
Distilled white vinegar
Caraway seeds
Salt and pepper to taste
Slice the vegetables
Cut the cabbage into quarters, removing the core. Cut the onion in half. Slice both the onion and cabbage crosswise into thin strips.

Sauté the onion and garlic
Warm the oil in a large pot over medium heat. Add the onions and garlic. Stir occasionally until the onions are translucent and beginning to turn golden.
Add the red cabbage
Add the red cabbage to the pot, along with a pinch of salt. Stir to coat the cabbage in oil. Reduce heat to medium-low.

Sauté until tender
Cook, stirring occasionally, for about 30 - 40 minutes or until the cabbage is tender. It will become a bit darker in color and glossy in appearance.

Add vinegar and caraway
Stir in the white vinegar and caraway seeds, then continue cooking for 5 - 10 minutes. Just before serving, season with salt and/or pepper to taste.
