Green tomatoes aren’t just for frying anymore. The grill tames their firm crunch and brings out a sweetness that support their natural acidity. In fact, the intense tanginess of grilled green tomatoes makes them an excellent balance for rich, savory flavors — try a slice in place of ripe tomatoes on your next veggie burger.
Zesty Grilled Green Tomatoes
Green tomatoes aren't just for frying anymore. Their intensely tangy flavor means that you hardly have to do more than slice them and throw them on the grill.
Ingredients
- 2 green tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Remove any stems and cut the tomatoes into thick slices (a bit thicker than you'd want a ripe tomato slice to be on a burger).
- Rub with olive oil, salt, and pepper.
- Grill over medium heat, covered, for about 10 minutes, flipping once or twice.
Notes
For the best texture, use tomatoes that are bright green. Tomatoes that are beginning to ripen and turn red will taste fine, but they will become very soft on the grill.
