Radicchio’s intense bitterness means that it’s usually used sparingly. But heat brings out its natural play between bitterness and sweetness. Smoky grilled radicchio makes a wonderful side for traditional cookout dishes, but it’s also a great addition to pastas, stews, salads, or anywhere you need a smoky, bittersweet crunch.
Bittersweet Grilled Radicchio
Heat sweetens the bitter bite of raw radicchio. Grilled radicchio makes an excellent addition to salads, pasta, and more — or can be served as a side dish on its own.
Ingredients
- 1 head of radicchio
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Remove any dry, brittle leaves from the radicchio, and cut away any browning at the base, leaving enough of the stem to hold all of the leaves together.
- Cut the radicchio into quarters, making sure to leave enough of the core attached to to hold each piece together. Dress the pieces with olive oil, garlic powder, salt and pepper and make sure they are well coated.*
- When you are ready to grill, place your radicchio pieces over medium heat. Cover the grill.
- Grill for around 10 minutes, or until the radicchio is lightly charred, flipping a few times to ensure that each side spends some time over the flame.
Notes
To allow the radicchio to retain more of its bitterness, cut it in half instead. Cutting into quarters allows it to cook through more, making it sweeter.
