There’s nothing wrong with sticking to the classics. If you are perfectly happy with grilled zucchini, eggplant, and peppers, carry on!
But if you want to expand your grilled vegetable palette, this guide is for you. We’re going on a deep dive into the produce aisle to find the best overlooked veggies (and, technically, one fruit) for grilling.
Some of the veggies on the list are are packing bold flavors, and don’t need much more than a brush of olive oil and a sprinkle of salt and pepper.
Others are mild, and will make a great foundation for your favorite spices, marinades, or sauces. Some of the favorites in my house are savory creole seasoning or sweet and spicy gochujang.

Green tomatoes aren't just for frying anymore. Their intensely tangy flavor means that you hardly have to do more than slice them and throw them on the grill.
These grilled beets are savory-sweet and smoky. Enjoy them as a side dish, or in a salad or wrap.
Heat sweetens the bitter bite of raw radicchio. Grilled radicchio makes an excellent addition to salads, pasta, and more — or can be served as a side dish on its own.
Crispy and soft, smoky and savory: grilled potatoes are the new hotness.
With its firm texture and fresh, mild flavor, kohlrabi could be the new star of grilling season.
