Rich, Fluffy Vegan Challah

This golden, light-as-a cloud bread is easy to bake, and a few secret ingredients make it tender, fluffy, and delicious.

Ingredients:

All purpose flour

Coconut oil

Sugar

Aquafaba

Instant yeast

Turmeric

Kala namak and salt

Make the starter

Combine one cup each of flour and water, along with the yeast, in a large bowl. Stir a few times to combine. Cover the starter and let it rest at room temperature for about 45 minutes.

Make the dough

Add the dry ingredients, sugar, coconut oil, and aquafaba to the starter. Knead the dough, either by hand or in a stand mixer, until it is smooth.

Let the dough rise

Transfer the dough into a large, oiled bowl or container.  Cover and let rise until the dough has nearly doubled in size.

Turn the dough out of the bowl onto a prepared surface. Shape it into one large loaf or in 6 - 8 smaller rolls.

Lightly cover the shaped challah with plastic wrap or a clean tea towel.  Let the bread proof for 45 minutes to an hour.

Bake the loaves or rolls

One large loaf will need to bake for 35 – 45 minutes.  Smaller rolls, on the other hand, may only need around 20 – 30 minutes.
