Classic Vegetarian Split Pea Soup

This savory, smokey vegan split pea soup is as comforting and tasty as it is healthy.

Ingredients:

Yellow or green split peas

Onion & garlic

Celery & carrots

Potatoes

Veggie broth or bouillon

Herbs & spices

Oil

sauté the onions

In a large pot, heat the oil over medium heat.  Then, add the chopped onions. Sauté them for about 5 minutes, or until they are translucent.

Add the Garlic, carrots & celery

Stir in the celery, carrots, and garlic and continue cooking for about 5 minutes. The vegetables should begin to soften slightly.

Add the rest of the ingredients

Stir in the split peas, potatoes, water or broth, bouillon cubes, smoked paprika, marjoram, thyme, and bay leaves.

Simmer to combine

Increase the heat and bring the soup to a boil. Then, reduce heat to a simmer. Cook for about 2 hours, or until the split peas are completely soft and falling apart.

This vegan split pea soup is filling enough to stand alone as a complete meal, but it’s also excellent served with a crisp salad and rye bread or cornbread.
