Radicchio, Sausage, & White Bean Pasta

Savory sausage and refreshing radicchio give this pasta its bold and balanced flavors.

Ingredients:

1 head radicchio

8 ounces pasta

1 tablespoon olive oil

2 pieces vegan sausage

1 medium onion

6 cloves garlic

1/4 cup nutritional yeast

1 can of cannellini beans

2 tablespoons lemon juice

Soak the radicchio

Place the radicchio in a large bowl, then pour cold water over it to fill.  Set aside to soak while preparing and cooking the other ingredients.

Prep the pasta

Follow the instructions on the package, subtracting two minutes from the cooking time. Strain the pasta, reserving about 1/4 cup of the water. Rinse with cool water and set aside.

Brown the sausage

Heat oil, if using, in a large pot or high-walled pan over medium heat.  Then, add the vegan sausage.  Stir occasionally to brown the sausage on both sides.

Add the onion & garlic

Add the onions and stir occasionally until they are translucent. Add the garlic and stir for a few moments until it becomes aromatic.

Add the beans & pasta

Add the cannellini beans with their liquid, the nutritional yeast, and the red pepper flakes, then gently fold in the pasta.  Bring to a simmer and cook for about 2 minutes.

Wilt the radicchio

Strain the radicchio and add it, along with the lemon juice, to the pan.  Stir continuously until the radicchio is just wilted, then serve immediately.
